One of the things I really missed when I last tried (and failed) Slimming World was pizza. I just love bread, tomatoes and cheese – and when you combine all of those, as far as I’m concerned there’s nothing better.
However, I had a bit of a brainwave recently that I wanted to share with you. The best thing about the recipe is that it is syn free. Syn free pizza?! I know.
For each serving you will need:
- One brown roll (HexB) (I prefer to freeze my rolls)
- Grated cheese (HexA, I use 30g as my cheese isn’t reduced fat)
- Tomato puree
- Absolutely anything else you want to chuck on top – I like:
- Red onion
- Leftover meats from Sunday roast (pork, chicken, beef…)
Have the oven heating up ready – I put it at 200° (fan oven). Firstly, take your roll out of the freezer, hold it on its side and slice it into thin layers – I normally get 3 out of it but you might manage 4. Make sure you’re very careful as you’ll need a big knife – this is why I prefer them frozen as it makes it much easier to work with.
After this, lay them out on a baking tray and spread the tomato puree on them with a butter knife. Then divide the grated cheese up (or you could slice it – up to you!) and put it on top of the tomato puree. Finally add whatever else you want on your pizza – this really is a very simple recipe that you can alter to your tastes.
Pop them into the oven for around 10-15 minutes, or whenever they look good to you, and serve them up! These mini pizzas should go down a treat with the whole family – even Josh likes them, and considering he doesn’t eat cheese or mushrooms that’s saying something. Like I say though, just alter it however you wish; Josh and I have this meal together and I just don’t add the cheese or mushrooms to his.
As this recipe only makes 3 small pizzas you will probably want something to go with them – I recommend Slimming World Chips, or you could just double up the recipe if you have syns to spare!
